Hello, just popping in to share my plantain masher, tostonera as it’s called back home.
This short little video is simply to share with you, my grandfather handmade wooden plantain masher. Believe it or not, I’ve had it ever since I could remember,
To be honest I actually can’t remember not ever having it and if my memory serves be well, I most of been 14 years old…and still kicking plantanos and taking names LOL.
There’s a range of tostonera out there but I wouldn’t change this one for anything in the world, whenever i use it I think of my grandpa whom i loved so much!
Give this deliciousness a try, it’s pretty, simple… all you need is oil for deep frying
Plantain, sausage and Spanish frying cheese, which you can find at your local grocery store.
NOTE( Don’t skim on the oil, when frying is best to deep fry, so the food gets seared and doesn’t absorb to much of the oil.
When making fried green plantain, there’s a 2-step process ( If you’re making the ripe plantain it only requires frying once, verses twice for like for green plantain
1- Step one peel and cut plantain into 1” circles
2- ensure oil is hot, but not so hot that it turns to a dark golden color too quickly.
What we’re looking for is the color you see as demonstrated in the video.
3- Using the masher, mash the plantain ( If you don’t have a plantain masher use the bottom of anything that with a flat bottom, like a jar or drinking glass will work just as well) and fry a 2nd time for about 2 to 3 minutes
4- Fry cheese until golden color, Note the Spanish cheese doesn’t need any flouring at all, some people do flour it before frying, i don’t I pat it dry with paper-towel and fry it.
5 – Lastly fry the sausage!
This is a staple food in Dominican homes
