For a refreshing and simple dessert, try Jacques Pépin’s grapefruit recipe. Jacques demonstrates how to peel the fruit in a single cut that removes the pith (that pesky white membrane that no one likes). He also shows us a handy technique for separating the segments with a knife. Sauce the plate from the center out with apricot or raspberry sauce or marmalade. Layer the grapefruit segments on top and fan them out. Garnish with julienned grapefruit around the edges and a sprig of mint or basil in the center. That’s it! Simple and refreshing.
