INGREDIENTS:

1 box puff pastry thawed in the fridge according to package(the one I used was 397 grams)

water

pinch of salt

3 ripe plantains

1 cinnamon stick

1/4 cup granulated sugar

1 tbsp butter

1 tbsp lemon juice

1/4 tsp nutmeg

2 tsps vanilla

1 or 2 drops almond essence

1. The puff pastry will always be in the frozen section of the supermarket. Sometimes in the icecream freezer.

2. If you can’t find puff pastry you may use shortcrust pastry. It is done the same way I do my Fried Dumpling dough. Rub the pieces of fat into the salted flour and mix in water then knead. Rest and roll out the same way.

Easy shortcrust is:

2 cups flour

1 stick unsalted butter cut in tiny pieces or 1/2 cup shortening

Add enough cold water to form a smooth and not sticky dough.

Roll out and use.
