Rabbit with mustard ,a food that you will want to try !
Here’s the recipe:
Ingredients:
•2 Rabbits (chubby ones)
•2 cups Chanterelles
•1/2 cup Lobster Mushrooms
•2 tbsp Maille Dijon Mustard
•2 tbsp Maille Grainy Mustard
•2 tbsp Maple Syrup
•500 mL Heavy Cream (35%)
•250 mL White Wine
•1 Shallot
•3 Cloves of Garlic
•10-12 Parsley Leaves
•1 Bunch of Chives
•2 tbsp Butter
•Olive Oil
•Salt & Pepper (to taste)
Preparation:
1-Season rabbit with salt and pepper. Drizzle Olive Oil in a hot pan and sear rabbit until golden brown. Set rabbits aside, add butter to the pan. Cook mushrooms for 5 minutes on high heat. Season with salt & pepper. Add shallot, garlic and cook for 2 more minutes. Deglaze with white wine. Let it reduce in half. Add heavy cream, 1 tbsp of Maille Dijon Mustard, 1 tbsp of Maille Grainy Mustard, bring to a simmer.
2-In a mixing bowl, add remaining mustards and maple syrup. Mix well, then baste rabbits on all sides with the mustard mixture using a brush. Place the rabbits back in the pan and bake for 40 minutes in 350 degrees Fahrenheit oven. Baste with sauce every 10 minutes.
